Pink Champagne Cuptails Recipe.
Try something extra special and make some Pink Champagne Cuptails.
These are perfect for a fabulous dinner party or cocktail reception.
A cuptail is an alcoholic cupcake.
Ingredients: Makes 12 Cuptails
Cake
125g Butter
125 Caster sugar
125g Plain flour
2 eggs
1 Vanilla Pod or 1 teaspoon of vanilla essence
1 tea spoon of baking powder
3 table spoons of Champagne
Buttercream
175g Icing sugar
75g butter
Pink food colouring
1. Preheat the oven to 180 degrees, fan 160 degrees, gas 4. Line a 12-hole niffin tin with cases. .
2. Cream the butter and sugar together for 5 minutes until light and fluffy.
3. Add the eggs one by one and mix well.
4. Sift the flour and baking powder in a large bowl. Add the flour to the mixture and mix well.
5. Stir in the champagne and mix for a futhur minute.
6. Pour the mixture into the muffin cases evenly and place into the oven for 25 minutes.
For the buttercream.
1. Sift the icing sugar into a large bowl.
2. Add the butter to the icing sugar and mix well.
2. Add the pink food colouring and mix together until you have your desired coloured.
